How to create an evening your friends will still be talking about next summer.

Somewhere along the way, we started believing that entertaining had to be reserved for birthdays, anniversaries, and holidays. We wait until everything is perfect – the house is spotless, the menu is planned, and there’s finally a reason to invite people over.

While there is a place for that, some of my favourite evenings have happened for no reason at all. Just a warm summer evening. A few friends. Good food. A bottle of champagne. Music playing softly in the background. The kind of night where someone says, “We should do this more often.”

That’s exactly why I love a summertime cocktail party. It doesn’t have to be formal (though it can be if that is your vibe). It isn’t complicated. It’s simply about creating a beautiful space where people can slow down, laugh a little longer, and stay outside until the stars appear.

You don’t need matching chairs or an elaborate menu. A few thoughtful details are often all it takes.

Set the Scene, Not the Table

One of the biggest misconceptions about entertaining is that every corner has to be perfect. It doesn’t. Instead of trying to decorate everything, choose one or two things to do beautifully and let it become the heart of the evening.

Maybe it’s a large bouquet of hydrangeas spilling across the centre of the table. Maybe it’s dozens of candles flickering as the sun goes down. Maybe it’s an overflowing charcuterie board that guests can’t stop gathering around.

When one element feels generous and abundant, the entire evening feels thoughtful. Your guests won’t remember whether every napkin matched, they’ll remember how your home made them feel.

The best hosts spend less time in the kitchen and more time around the table, so choose foods that can happily sit out while conversations linger.

Below, we’ve included two menus: an Easy Cocktail Party Menu for those last-minute invitations, and an Elevated Cocktail Party Menu for evenings when you have a little more time to prepare. Both are designed to be simple, seasonal, and easy to assemble, not hours of work.

If you’re serving fresh oysters over crushed ice, they’re the one exception — they’re best enjoyed as soon as they’re served. Everything else should be able to relax right alongside you, whether it’s creamy burrata with ripe peaches and basil, marinated olives, warm baguette with salted butter, a generous charcuterie board, or even a bowl of buttery popcorn sprinkled with flaky sea salt. The beauty is that you can make it as simple or as elevated as you’d like.

Finish with one uncomplicated dessert — fresh berries, lemon tarts, or scoops of vanilla ice cream drizzled with olive oil and flaky sea salt.

Remember, people rarely remember every bite they ate. They always remember whether you were sitting beside them.


Easy Coastal Cocktail Party Menu

Elevated Coastal Cocktail Party Menu

To Start

  • Fresh oysters on ice with lemon wedges, red wine vinegar & horse radish
  • Marinated olives
  • Salted Marcona almonds
  • Kettle chips with French onion dip

Cheese & Charcuterie

  • A selection of local cheeses (at least 3, 6 is better)
  • Prosciutto or salami (or both)
  • Fresh baguette or artisan crackers
  • Fig jam or local honey

Light Bites

  • Burrata with ripe peaches and basil
  • Smoked salmon locks on cream cheese, sprinkled with dill on a crostini
  • Caprese skewers
  • Shrimp cocktail with lemon

Fresh & Seasonal

  • Cherries
  • Strawberries
  • Sliced peaches
  • Mixed berries

Warm Additions (Optional)

  • Warm baguette with salted butter
  • Mini baked brie with honey

Let the Evening Unfold

One of the easiest ways to make a gathering feel effortless is to stop trying to control every minute of it.

Prepare as much as possible before hand, and then sit back and relax. Put on a playlist before your guests arrive, light the candles before sunset, pour the first glass of champagne as people walk through the door.

As the sky begins to soften, people naturally slow down too. Someone wanders toward the charcuterie board. Another friend starts telling a story. You suggest opening another bottle. The atmosphere begins doing the work for you.

One of the easiest ways to make a gathering feel a little more special is with a couple of printed touches that look like they came from a boutique event planner, but cost almost nothing.

Design a simple cocktail menu on canvas and a welcome sign or printed quote to match. Even small food labels can elevate the evening. Print them at home on matte photo paper or heavy cardstock, slip your welcome sign into a frame you already own, and place the menu beside the drinks station or charcuterie board.

Let the little details set the tone. Guests will notice the extra effort, even if they can’t quite put their finger on why everything feels so polished. Sometimes it’s the smallest finishing touches that make an evening feel truly memorable.

Friday’s Fresh Grapefruit Aperol Spritz

Light, citrusy, and just bitter enough to keep you coming back for another sip, the Aperol Spritz has become a summer classic for good reason. This fresh grapefruit version adds a bright, slightly tart twist that feels right at home on a warm evening by the water. It’s refreshing, effortless to make, and the beautiful blush-orange colour looks as lovely in your hand as it does on the table.

The classic Aperol Spritz is traditionally made using a 3:2:1 ratio of Prosecco, Aperol, and soda water. For this coastal twist, we lighten the bitterness with fresh pink grapefruit juice and use a 4:3:2:1 ratio of Prosecco, Aperol, grapefruit juice, and sparkling water. The result is bright, crisp, and beautifully balanced – refreshing enough for a warm summer afternoon yet elegant enough to serve as the signature cocktail at your next gathering.

One of the best things about this recipe is how effortless it is to make. There’s no cocktail shaker, muddling, or complicated techniques involved. Simply pour everything over ice, give it a gentle stir, and finish with a slice of grapefruit and a sprig of fresh rosemary or thyme. It’s proof that some of the most beautiful cocktails are also the simplest.

Ingredients
(Serves 1)

Ingredients

  • 4 oz chilled Prosecco
  • 3 oz Aperol
  • 2 oz fresh pink grapefruit juice
  • 1 oz sparkling water (club soda or soda water)
  • Ice
  • Fresh grapefruit slice, for garnish
  • Sprig of fresh rosemary or thyme (optional)

Directions

  1. Fill a large wine glass with ice.
  2. Pour in the Prosecco, followed by the Aperol and fresh grapefruit juice.
  3. Top with sparkling water and give everything a gentle stir.
  4. Garnish with a fresh grapefruit slice and a sprig of rosemary or thyme, if desired.
  5. Serve immediately while beautifully chilled.

Friday Harbour Tip: Chill all of your ingredients before mixing. Using cold Prosecco and sparkling water means less ice melts into the drink, keeping every sip crisp, bubbly, and perfectly balanced from the first pour to the last.
